Yesterday, Thursday, December 21, 2017, was the winter solstice. It’s the day (and night) to celebrate the shortest day and longest night of the year.
What’s awesome about the winter solstice is that daylight from today onwards will last a bit longer until we finally get to spring and summer.
I can’t wait to get to spring so I can start working on my garden plot again. The winter is tough on our little plants.
While waiting for the warm weather to greet me, I’m making the most of the cold by enjoying pomegranates and hot chocolate.

Here’s the recipe for hot chocolate that I made for Alex last night:
Quick Hot Chocolate Made With Love
- 2 rows of dark chocolate squares from the Trader Joe’s Pound Plus Dark Chocolate (54% cocoa, Belgium chocolate)
- 1 cup of heavy whipping cream
Zap it in the microwave for 1 minute and 30 seconds. Let sit for 2 minutes and then stir with a whisk until combined.
It’s rich. Very rich. So you may want to add some hot water to dilute it a bit.
Enjoy the hot chocolate in a festive mug with a warm hug.
